Greek Salad
Ingredients
- 1/4 cup extra virgin oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 12 cups romaine lettuce, bite size pieces
- 2 cups cumcumber, peeled, seeded, sliced
- 4 slices red onion, cut in half, separated into rings
- 4 tomatoes, cut into wedges
- 12 Kalamata olives, pitted
- 1/4 cup feta cheese, crumbled
- 1/4 cup sliced roasted almonds
Preparation Time: 10 minutes
- In large bowl, whisk together oil, vinegar, oregano, salt and pepper. Add lettuce, cucumber, and onion. Toss gently until evenly coated with dressing.
- Divide among 4 plates. Garnish with tomatoes and olives; sprinkle with feta cheese and almonds.
